Which fruit trees for Carlow?

My son has recently bought a house in Bagnelstown, Co. Carlow. It has a huge garden, with good alkaline soil & some old fruit trees. They are quite wild now, and he wants to plan a new orchard for the future. Could you tell me which varieties would be best, as they have to be ordered soon i.e.of apples, cherries, plums, eating pears.Nothing too high, so the fruit can be picked easily, say 10 feet or so, and what about pollinators? We’re really new to this. I would appreciate some help before we order, as it is such a long-term thing.
